
1 beef flank steak (2 lbs), thinly sliced
1 c. tomato juice
2 garlic cloves, minced
1 Tbl. minced fresh cilantro or parsley (I used dried)
1 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. ground coriander
1 med. onion, sliced
1 med. green pepper, julienned
1 med. sweet red pepper, julienned
1 med. jalapeno, cut into thin strips (I left this ingred. out)
12 flour tortillas
Place beef in slow cooker. Combine the next 7 ingredients; pour over beef. Cover and cook on low for 6-7 hours. Add onion, peppers and jalapeno. Cover and cook 1 hour longer or until meat and vegetables are tender. Using a slotted spoon, place about 1/2 c. of meat-vegetable mixture on each tortilla. Add desired toppings.

We LOVE fajitas but I've never thought about doing them in the crock pot. What a great idea and time saver during the chaotic evening time. Thanks for the recipe!
I always make my fajitas in the crockpot - of course they have been modified as I can't eat onions but you're right, the meat is incredibly tender!
