Something Other Than Sweets...

I've done plenty of posts about desserts and sweets and figured it was about time to post about something else. Here are 3 main course dishes I've prepared late and all 3 have been a hit with Hubby. The best part? They're all very easy!

The first is State Fair Subs...


The second is Stuffed Chicken Breasts...


The third is Spaghetti Pie (Hubby's all-time favorite)...


I highly recommend all 3. I won't post the recipes because that would take too long but if you want one (or all 3), just ask!

It's Working!

I am so excited! Teaching JJ to self-soothe is actually working and it's easier than I anticipated. Last night, he slept through the night for the FIRST TIME EVER! He fell asleep at 9:30 and didn't wake up until about 7:00 this morning. 9 and a half straight hours of sleep. Yay for me! I never thought I'd see the day. The night before last, he woke up once, cried for about 3-4 mins. then fell back asleep. I'm praying this wonderful thing continues and we'll get another great night's rest tonight.

Pray For Stellan

The Not-So-Fun Part Of Motherhood

JJ is almost 1 yr. old now and is still waking up 2-3 times a night. Sometimes more. I wake up each time he does and nurse him back to sleep. So, for almost a year I've gotten up several times a night (no wonder I'm so tired.) I blame it on myself. I never taught him to self-soothe. I always jumped as soon as he started fussing and nursed him to sleep. This can't keep happening so we've started the process of teaching him to put himself back to sleep. And, I must say, it sucks! It is one of the hardest, most heartbreaking things I've had to do. It takes every ounce of strength not to run in his room, pick him up, and cuddle him. As a mother, it is instinct to comfort our babies when they are sad and crying and it breaks our hearts when we are unable to do so. I tried it for the first time the other night. I sat in the living room and cried while JJ sat in his crib and cried. I lasted about 25 mins. before giving in and rushing to his room to sweep him into my arms and rock my sweet boy back to sleep. Hubby and I decided to give it another try tonight. JJ woke up after only two and a half hours of sleep and immediately began to fuss (my usual signal to come to the rescue). Instead, I forced myself to wait. JJ's fussing turned into cries which turned into heart-wrenching, mommy-where-are-you wailing. Jorge and I lay in bed listening and hoping he would fall asleep quickly. 8 minutes later he was out. Thankfully it was only 8 minutes (an extremely long 8 minutes) because I don't think I could have handled much more. He only woke up 1 other time and that was about 6:00 this morning. He was wide awake and ready to play so I put him in his play pen with his toys and I snoozed on the couch. I hope this is the first of many and not the first and last. Maybe I'll start getting a little more sleep now...

I didn't enter a photo in the I Heart Faces contest the last couple weeks for various reasons: too busy, computer wasn't working, etc. Anyway, I'm entering again this week and the theme is No Flash which means the picture had to have been taken without using the flash. (duh. Probably didn't need to explain that one...) So, here are my entries...

My Outdoors-y Boy

Saint Patrick's Day happened to be a very beautiful day this year. It was gorgeous outside so we took advantage of it and spent some time outside. He crawled around in the grass for the first time ever and he also got to swing for the first time. He loved every minute of it! He smiled and laughed the whole time. I believe we may have an outdoors-y boy on our hands, which is fine with me. Camping, here we come! Anyway, here are a few pics from that gorgeous day.








Cookies, Cupcakes, and Brownies...Oh, My!

Once again, I've been baking and I've found a couple fabulous recipes. I've always struggled to keep my Chocolate Chip cookies from going flat and I finally have the perfect Chocolate Chip cookie recipe. The cookies stay moist and chewy and Oh. So. Perfect. The other fabulous recipe is Midnight Molten Brownie Cupcakes. And yes, they taste just as good as they sound. Of course, I took pictures to tempt you with...enjoy! ;)

A Day of Baking and Cooking With Mom

JJ and I spent the day at my parent's house yesterday because Jorge was going to be home late. With the weather being as yucky as it was, we had no choice but to stay inside. And since we were inside all day, I got bored. And when I get bored I do what? I bake! So, that's what we did. First, we made Turtle Brownies, then we made The Best Chocolate Sheet Cake, Ever, then we made Paprika Chicken, Strawberry Spinach Salad, and Asparagus for supper. Can you say YUM!?!? It was all so good! The brownies were caramel-y, the cake was chocolate-y, the chicken was moist, and the spinach salad had such a great blend of flavors. I'm getting hungry just thinking about it! :) So, here are some pictures from my day of baking and cooking. Enjoy!
