Cursed With A Sweet Tooth
I have a confession...it is 11:00 pm and I just made chocolate fudge brownies about an hour ago! I know I should be more health-conscious but they're so yummy! I must admit that I don't have the greatest self-control in this area of my life. I had a Dr. appointment last week and, hallelujah, I'm back to my pre-baby weight! Unfortunately, I've been using that as an excuse to continue eating the way that I do. I basically eat what I want, when I want. It's a bad habit that started when I was pregnant and has continued through the 7 1/2 months since JJ was born. Oh, well. I guess I'd better just enjoy it while I can because I know that one day this will all have to change.
Another bad habit I've accquired is baking when I'm bored. Since I'm home with JJ most of the day, I find myself getting cabin fever so I have to find something to do. I love to bake and I love sweets so it works out well for me - sort of. And my husband loves all the homemade goodies but doesn't like the consequences that come with it! I need to find healthy, yummy goodies to bake. That way, we'll all be happier and healthier! I could certainly use suggestions. Cooking and baking are 2 things that I really enjoy and I love trying new things. All ideas are welcome!

How about black bean brownies?
Now before you go "blech" and wrinkle your nose - (which I must confess was my initial reaction!) give it a try...you can not tell the black beans are in them!
1 brownie mix
15 oz can Black Beans, rinsed and drained
1 Cup Water
Preheat oven to 350°. In a blender, puree the beans and water together until completely smooth. Stir pureed black beans into the dry brownie mix until combined. Spray a 9"x13" pan with
non-stick cooking spray.
Pour the mixture into the pan and bake for 25-27 minutes or until a
toothpick inserted 2" from the side of the pan comes out almost
clean.
These will be more like "cake" brownies.
These are very healthy & provide fiber...who knew, healthy brownies?!
Cool completely and then cut into 24 pieces. Don't worry, you can't taste
the beans. This brownie is more like a dense cake like brownie.
It actually doesn't sound too bad. I've had zucchini chocolate cake before (zucchini in the mix but you can't taste it at all) and it's one of the best cakes I've had. I'm going to have to remember to try the Black Bean Brownies! Thanks for the idea. I love to bake and cook so I'm always looking for great recipes!

Hey I was going to respond with how yummy your brownies look (and they do) but then I saw the black bean brownies and thought I hope you don't mind if I give them a try since I can't help but notice that there is no egg in them so they would be a safe baked sweet for my kids :) Great blogging Leah!
